How to Make Cannabis Gummies with Infused Coconut Oil

In this blog post I’m going to show you how I made cannabis gummies using infused coconut oil.

Start by getting all your tools and ingredients out, making gummies moves pretty quickly so you want to have everything set up and ready to go

Step One

The first step is to “bloom” your gelatin - this is done by mixing 1/2 cup water (or juice) with the four packs of powdered gelatin. It’s fully mixed with the gelatin when it becomes thick and gel like. Put this aside until later

Step Two

Now its time to melt the infused coconut oil. You will do this in your double boiler. Which is a basically one large pot filled with water and another smaller pot sitting inside of it.
Heat up the double boiler and fully melt the 2/3rd cups of cannabis coconut oil. 

Step Three

Once the coconut oil is fully melted you can add the lecithin- if you’re using granulated lecithin make sure it is mixed very well into the oil - no clumps. Leave it on very low heat while you work on the next step.

Step Four

In your other pot bring your remaining 1/2 cup of water of juice to a full boil on medium-high heat then you can mix in your Jello pack and add your mold inhibitor

Step Five

Now it’s time to bring the contents of the two pots together. Carefully and slowly pour the jello mixture into your double boiler containing the cannabis oil and whisk this until well mixed.

Step Six

Remember your bloomed gelatin? This is now going to be put in the mix. Place the bloomed gelatin in your double boiler, and add the flavoring (optional) 5-10 drops. 

Step Seven

Now you need to whisk this consistently for 10 minutes, making sure no clumps form.

STEP EIGHT

After the 10 mins are up it’s time to put your mixture into the molds

This can be the most stressful part because you want to move fast so the mixture doesn’t start to solidify before you get it in the mold.

I use a Wilton brand easy pour funnel. It makes this process so much quicker, easier and most importantly if used properly there will be no waste and no mess.

You can also use a plastic squeeze bottle that you can fill up using a funnel.

With a lot of the gummy molds you get a dropper, don’t use this. Its slow and tedious, a HUGE pain in the ass. 

Whatever method you choose fill up your molds, move quickly so the mixture doesn’t start to solidify.

STEP NINE

After your molds are filled leave them for at least half an hour before taking them out.

Step Ten

Carefully remove the gummy candies from the molds and place them on a wire baking rack or plastic cutting board. 

Once they are solidified they are good to eat… BUT

They need to air dry for 24-72 hours before storing them in an airtight container in the fridge. There is still moisture in the gummy candies and you need them to dry out or they are more likely to go moldy within a few days. Properly dried dummies will store in the fridge for 1-2 weeks. Once you see mold on them it’s game over and they are garbage.

So the air-drying step is important, you’ll know they are fully airdried when they are dry to the touch and have firmed up even more from when you originally took them out of the silicone molds. If you put them in an airtight container and notice condensation forming inside the Tupperware they have not fully dried out.

Air Drying Hack: Personally, I can’t leave them out to air dry on my counter because I have two cats and don’t want their hair stuck to my gummies. So I put mine inside the oven to dry out.  If you have nowhere else to put them, then it makes a good option - Just DONT forget about them and preheat the oven without taking them out.. I may have done this once… or twice.. and it makes a goopy mess and your dummies are ruined.. and you are sad.. 

Alternatively, you can use a food dehydrator to speed up the drying process. Just make sure there isn’t any heat or else you will also melt them. Using a food dehydrator is defintely the best option but it’s not a very common kitchen appliance.
